THE RECIPE

Banana Tea Bread

½ cup butter, soft

1 1/3 cup sugar

2 eggs

¼ cup sour cream

2 tablespoons light rum or milk (I use milk.)

1 teaspoon almond extract

Powdered sugar (optional)

2 cup all-purpose flour

1 ½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup mashed and ripened bananas (The riper the better.)

1 ½ cup chopped pecans (Toast pecans to add a hint of a smoke flavor profile to the recipe.)

Bake at 350 degrees for 10-15 minutes


Combine butter and sugar in a large mixing bowl; cram until light and fluffy. Add eggs, sour

cream, rum or milk, and almond extract, mixing well. Combine flour, baking powder, baking

soda, and salt; add to creamed mixture alternately with mashed bananas, mixing well after each addition. Stir in pecans. Pour batter into a greased 9x5x3 inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes or until done. If loaf gets too brown, cover with aluminum foil. Remove from pan; cool. Sprinkle loaf with powdered sugar is desired. Makes 1 loaf.
